She is a Food Technologist and holds a Ph.D. in Gastrointestinal/Food Microbiology from School of Food Biosciences, The University of Reading, UK. She has over 23 years of research experience in Food Microbiology with participation in many national, European and Food Industry subsidized programs. She has 16 years of teaching experience at undergraduate and postgraduate level (M.Sc. in Quality Management Systems and Production Organization in the Food Industry – Department of Food Technology, M.Sc. Introduction to Microbiology/M.Sc. Genetic Engineering – The University of Reading, M.Sc. Nutritional Medicine – University of Surrey).

Her research work includes 25 publications in international peer-reviewed scientific journals (5 manuscripts under preparation), 2 Book Chapters in international books from recognized publishing houses and 27 abstracts in international (24) and national (3) conferences (h-index 15, cross-references 778 – Google Scholar, h-index 14, cross-references 533 – Scopus). She was a fellow of the EUFORA program of the European Food Safety Authority (EFSA) and a Founding member of the EUFORA Alumni Board for five years. She is a reviewer in 17 international scientific journals with a high impact factor.

Her main research interests include:

  • antimicrobial activity of chemicals, nanomaterials and nanoceramics as potential food packaging materials
  • antimicrobial activity of essential oils against pathogenic microorganisms, for disinfection of surfaces and hands in the food industry
  • Inhibition pathogenic bacteria in food with natural or chemical antimicrobials
  • creation of enhanced antimicrobial synbiotics and probiotic properties of microbial strains isolated from traditional Greek foods
  • antimicrobial action of final fermentation products of probiotics, prebiotics and synbiotics
