Panayotis D. Karayannakidis is Assistant Professor at the Department of Food Science and Technology of the International Hellenic University (IHU) specializing in the areas of ‘Fisheries Science and Technology’ and ‘Meat Science and Technology’. He graduated from the Department of Food Technology of the Alexander Technological Educational Institute of Thessaloniki in 2003, while in 2007 he completed his doctoral studies from the University of Lincoln (UK) (Thesis entitled: The effect of washing, frozen storage and various additives on the properties of sardine (Sardina pilchardus) mince kamaboko gels).
His research interests include among others: (i) development of environmentally friendly technologies for the production of food from both fish and meat, (ii) new product development from aquatic organisms and terrestrial animals, (iii) utilization of fish and meat by-products of the food industries, in order to produce value-added products, (iv) isolation and characterization of bioactive compounds from marine bioresources and (v) process simulation using the SuperPro Designer Software.
To date, he has actively participated in 17 national and international research programs. He is the inventor of a national patent that is related to the development of a process for the production of gelatin from the skins of lean and fatty fish species and is the author of 24 publications in international peer reviewed scientific journals (Scopus h-index: 13). A significant part of his research activity (>30) has been also presented in both national and international conferences. Furthermore, he has written a book chapter and is a reviewer in 15 international scientific journals related with food.
In addition, Dr. Karayannakidis is a laboratory expert on chemical testing for the Hellenic Accreditation System (ESYD).
