Kotsiou Kali

Kali Kotsiou holds a B.Sc. in Chemistry from the University of Ioannina, where she also earned her M.Sc. in Food Science and Technology and her Ph.D. in Chemistry. She has worked for several years as a postdoctoral researcher at the Aristotle University of Thessaloniki (AUTH) and the International Hellenic University (IHU), with extensive research and teaching experience. Her research interests focus on the qualitative and quantitative determination of food macro- and micro-components (such as acrylamide, phenolic compounds, fatty acids, volatile/aromatic compounds, mycotoxins, etc.) using chromatographic techniques (HPLC-DAD, HPLC-MS/MS, HPLC-RI, HPLC-FLD, GC-MS, and GC-FID). Additionally, she specializes in the physicochemical and structural characterization of foods and food macromolecules (polysaccharides, proteins), employing size-exclusion chromatography (HPLC-SEC), FTIR spectroscopy, differential scanning calorimetry (DSC), and rheology. Her research activities also include the application of in vitro enzymatic protocols to simulate gastrointestinal digestion, with an emphasis on the release kinetics of components such as glucose and fatty acids.
